White Chicken Tortilla Chili is certainly a different kind of chili from the traditional western chili. However, it is equally delicious! And, cooking it in the slow-cooker means it is pretty easy, too. No matter the occasion, whether hosting friends to watch the football game or just to have a warm meal on a cold winter day, this is a great choice!
Ingredients
- 2 – 3 cans (15 oz each) white beans
- 2 chicken breasts (large), cooked and shredded
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon cilantro
- 1/2 teaspoon sugar
- 1/2 teaspoon corn starch
- tortilla chip strips
Preparation of White Chicken Tortilla Chili
Combine everything except the tortilla strips in the slow-cooker and mix well. Add just enough water to your liking (less for a thicker chili consistency, more for a thinner soup consistency)
Cook it!
Place lid on slow-cooker and cook on low for 3 – 4 hours. Add some tortilla strips 10 – 15 minutes prior to serving. Add some tortilla strips as garnish on top when serving.
Enjoy!
For more flare, adding some diced jalapeno adds a little heat and flavor to an already great recipe. A spoonful of sour cream is good, too! Fresh, hot corn bread on the side compliments this chili well.
